Pat Lawlor, a fifth generation farmer living in County Westmeath, was sitting at his kitchen table one evening in 1999 faced with an unsure farming future. All his life, he was a conventional farmer, a sector which had become increasingly challenging with an uncertain future. When Lawlor noticed a move in consumer shopping habits towards organic produce, he decided to turn his tillage farm organic supplying organic produce to food manufactures.
In 2011, Pat expanded further by deciding to produce branded organic oats under the name Kilbeggan Porridge, which has become an iconic artisan product in Ireland. Kilbeggan Porridge oats offer two distinct types, porridge oatlets or creamy porridge and jumbo oats which are stocked in a number of health stores across Ireland.
